Cinnamon Coffee Cake

Two bowls. One pan. 1 hour from beginning to end. It doesn’t any easier. Enjoy!

*Gluten free: To make this cake gluten free, simply substitute regular flour for Bob’s Redmill Gluten Free All-Purpose Baking Flour.

CINNAMON COFFEE CAKE

Preheat oven to 375 degrees (350 degrees if using a coated, non-stick pan).

Mix together dry ingredients in mixing bowl:

1 1/2 cups flour
3/4 cup sugar
2 1/2 tsp baking powder
3/4 tsp salt

Add wet ingredients:

1/4 c melted butter or vegetable oil
3/4 c milk
1 egg

Mix together in a separate bowl:

Topping:
1 c sugar
2/3 c flour
1 tsp cinnamon
1/2 c soft butter (or vegan butter)

Pour batter into circular, springform pan with parchment on the bottom, then spray with non-stick baker’s spray, or butter/flour.

Sprinkle topping over batter.

Bake for 25-30 minutes, or until toothpick has a few tiny crumbs on it.
