Cinnamon Coffee Cake

Brunch is a passion of mine. I love it for it’s versatility, but also because it’s a wonderful way to get friends or family together for some casual conversation and great food. Admittedly, this is usually accompanied by a football game in the fall, but a coffee cake with a side of espresso is perfect any time of year for catching up.

CINNAMON COFFEE CAKE

Ingredients

1 1/2 cups flour

2 tsp baking powder

3/4 cup sugar

1/4 tsp salt

3/4 cups milk

1/4 cup (2 oz) melted butter (cooled)

1 egg

1/2 tsp vanilla

2/3 cups brown sugar

1/2 cups flour

1 tsp cinnamon

6 TLB Firm butter

powdered sugar

Directions

*Spray or grease a non-stick 8×8 pan or round spring form pan.

*Mix the dry ingredients (flour, sugar, baking powder and salt) together in the mixer.

*In a separate bowl, whisk together the wet ingredients (milk, egg, butter and vanilla)

*Incorporate the wet ingredients into the dry ingredients in your mixing bowl. Mix gently until all the batter is smooth.

*Pour into pan.

*In a separate bowl, use a form to incorporate the ingredients. Spread crumble on top of the batter.

*Bake at 375 degrees for 25-30 minutes.

*Dust with powdered sugar when cooled.
